Basil Tomatoes

(from the Paleo Diet by Loren Cordain and Joe Friel, p247)


serves 4

4 medium tomatoes, sliced
¼ cup flaxseed oil
1½ tbs lemon juice
½ tsp onion powder
½ tsp dried basil
1/8 tsp cayenne pepper
1 clove garlic, minced


Place the tomatoes in a shallow dish. Combine the remaining ingredients and pour the dressing over the tomatoes. Cover and refrigerate before serving.


My thoughts:  Skip the flaxseed oil and go straight to olive oil.  There's not a pleasent aftertaste with the flaxseed oil.  Other than that, this was delicious and really fast/easy to make.

  1. Is this like the Paleo Diet? Mike has been begging me to do it and I refuse... Sounds very hard! Good luck to you!

  2. It is very similar, but with a few differences - the Paleo Diet allows "cheats" and a few other things. It was really tough the first couple of days but after I got settled into a routine, I find it's been pretty easy. Of course, I haven't gone out to dinner at a restaurant (that happens this weekend), so we'll see how well I do. I do feel a lot healthier and my appetite has gone down so I don't need to eat nearly as much or as often as I did before. I'm still waiting to see how my energy levels change and if it will help with the insomnia and headache stuff. You should give it a try - anyone can do anything for 30 days. :)
